Ingredients
- 1 cup crème fraîche
- 2 teaspoons finely grated lemon zest
- 1 scallion, minced
- 1 tablespoon finely chopped herbs such as parsley, chives, dill and/or parsley
- 1/2 teaspoon salt
- 24 sturdy potato chips, or more up to 30
- 1 clove garlic, halved
- 8 ounces smoked salmon, cut into bite-size pieces
- Fresh dill sprigs

Preparation
Step 1
Method:
Stir together crème fraîche, lemon zest, scallion and herbs. Season with salt. Chill at least 30 minutes and up to overnight before serving.
Assemble just before serving. Gently rub each potato chip with the cut garlic. Place one to two teaspoons of crème fraîche mixture on each potato chip, top with a piece of salmon and garnish with dill spring.
