Ingredients
- 3 1/2 c water
- 1 can(15oz) tomato puree
- 1 can(15oz)small white beans or Great Northern beans, rinsed and drained
- 1 can vegetable broth
- 2 small onions, finely chopped
- 1/2 c uncooked rice
- 1 1/2 t dried basil
- 1/4 t pepper
- 2 cloves garlic, minced
- 8 c coarsely chopped spinach
- 2 T finely shredded Parmesan Cheese
Preparation
Step 1
In a slow cooker, combine the water, tomato puree, beans, broth, onions, uncooked rice, basil pepper and garlic.
Cover and cook on low for 5-7 or on high for 2.5 to 3.5 hours.
Before serving stir in spinach. Sprinkle each serving with Parmesan cheese
