Ingredients
- 3/4 cup white or yellow onion, chopped
- 2 1/2 cups broccoli florets
- 1 teaspoon canola oil
- 1 teaspoon garlic, chopped
- 1/8 teaspoon fresh thyme, chopped
- 1/4 cup uncooked brown rice
- 5 cups vegetable stock
- Sea salt and freshly ground black pepper, to taste
- 2 cups water

Step 1
Wash and chop onion and broccoli
In a stock pot, over medium heat, add coil and sauté onions, garlic, and thyme until the onion is translucent.
Add rice to the onion and stir for 1 minute.
Add heated stock, water and broccoli to the rice and cook for about 20 minutes, or until rice and broccoli are tender.
Blend soup well with an immersion blender or hand mixer until smooth. If necessary strain liquid to remove any lumps.
Season with salt and pepper.
Add more stock for desired consistency and serve hot.
