Ingredients
- 2 3/4 c cooked rice
- 2/3 c raw peeled shrimp
- 2 T oil
- 2 scallions, chopped
- 3 eggs, beaten
- 2/3 c roast pork
- 2/3 c crab meat
- 2 T frozen green peas
- 2 T light soy sauce
- 1 tsp black pepper
- 1 T broth granules

Preparation
Step 1
1. Give the cold cooked rice a thorough raking to separate the grains. Devein the shrimp, making a deep slit down the back of each one.
2. Heat the oil in the wok and fry the scallions for 1 min. Push them to one side of the pan.
3. Add the beaten eggs to the pan, and cook until set. Remove from wok and chop coarsely.
4. Add the rice, shrimp, pork and crabmeat. Stir-fry vigorously for 3 min.
5. Add the frozen peas, soy sauce, and pepper. Sprinkle the broth granules into the wok. Stir-fry 3 min more then serve garnished with scallion.
