- 1/3 cup sugar
- 3 tbsp cornstarch
- 3 tbsp unsweetened cocoa powder
- 1/8 tsp salt
- 2 cups "milk"
- 2 tsp vanilly extract

Step 1
In a medium saucepan, stir together the sugar, corn starch, cocoa powder, and salt. Whisk in 1/4 cup of "milk" to make a paste. Stir in the remaining "milk" and vanilla and bring to a boil, stirring constantly. Reduce heat and simmer for 1 minute or until pudding starts to thicken. Portion evenly into shallow glass bowl. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
