Ingredients
- Filling:
- 3 peaches
- 2 Tb lemon juice
- 1/4 cup sugar
- 1/4 tsp cardamom
- Dough:
- 4 oz cold cream cheese cut in 6 pieces
- 1 sick cold butter cut in 8 pieces
- 1 cup flour
- 1/2 cup sugar
- 1/8 tsp salt
- Topping
- 1 egg yolk beaten
- 2 Tb sugar

Preparation
Step 1
Filling:
Peel & pit peaches, mix w/ remaining ingredients. Let sit for at least 15 min.
Dough:
Mix together ingredients until they just come together. Dough will be sticky. Turn out dough onto lightly floured parchment paper. Shape into circles (2-3) create lip on perimeter of each circle. Refrigerate for 1-24 hours. Put dough onto baking sheet fill crusts w/ peaches brush edges w/ beaten egg yolk & sprinkle w/ 2 Tb sugar. Bake at 400 degrees for 30-35 min.
