Ingredients
- 3 tablespoons pineapple preserves
- 2 tablespoons rice vinegar
- 2 teaspoons snipped fresh thyme
- 1/2 teaspoon minced garlic
- 1/8 teaspoon crushed red pepper flakes
- 1 pound orange roughy (or fish of your choice)
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt

Preparation
Step 1
Preheat grill to MEDIUM-HIGH. In a small bowl, whisk together preserves, vinegar, thyme, garlic and crushed red pepper flakes. Rinse fish, pat dry and cut into 4 serving pieces; sprinkle with black pepper and salt. Place fish on greased grill rack and cook for 4 to 6 minutes per 1/2-inch of thickness or until fish flakes easily when tested with a fork, brushing occasionally with preserve mixture.
SERVING SUGGESTION: Steamed red skin potatoes and grilled or steamed asparagus.
GLUTEN FREE: Make sure preserves and rice vinegar are gluten free.
