Flank Steak Tortilla

Ingredients
- # 1 pound flank steak
- # 4 tablespoons olive oil
- # salt and pepper
- # 4 eggs
- # 2 scallions, sliced thin
- # 1/4 cup cream
- # 1 red pepper, sliced
- # 1 red onion, sliced thin
- # 1 jalapeno, sliced thin
- # juice of 2 limes
- # 6 soft tortillas
- # 2 tablespoons butter

Preparation
Step 1
Season flank steak with olive oil and pepper. Sear flank steak on high heat in a skillet with 2 tablespoons olive oil. Cook 3 minutes per side depending on thickness of the meat. Remove steak from skillet and set aside to rest. Slice steak against the grain.
Continuing in the same skillet add onion, peppers and jalapeno to the pan. Sauté on high heat. Cook peppers and onions till tender seasoning with salt, pepper and lime juice. Remove from skillet and place in a small bowl.
Whisk eggs with heavy cream. Add scallions to egg mixture. Heat 2 tablespoons butter in a medium sauté pan on low. Add the eggs folding maybe twice with a spatula till done.
Warm tortillas in the oven or on the stove.
To assemble the tortillas place 2-3 slices of meat followed by a spoonful of egg, followed by the pepper mixture on a tortilla and roll.
