Ingredients
- 2 Cups flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. PENZEYS CINNAMON
- 1/2 tsp. salt
- 1 Cup butter, softened (2 sticks)
- 1-1/2 Cups brown sugar, packed
- 1 TB. honey
- 1 tsp. PURE VANILLA EXTRACT
- 2 eggs
- 1/2 Cup flaked coconut
- 3/4 Cup Craisins (dried, sweetened cranberries)
- 1/2 Cup white chocolate chips (regular would be good as well)
- 2 Cups oats (regular or quick-cooking)

Preparation
Step 1
Preheat oven to 350°. In a medium bowl, sift together the flour, baking soda, baking power, CINNAMON and salt. Set aside. In a large bowl, cream together the butter and sugar until fluffy. Mix in the honey and VANILLA. Beat until fluffy. Add the eggs, one at a time, and beat until fully incorporated. Mix in the coconut, Craisins, chocolate chips and oats. Fold in the flour mixture and mix well. Form into 1-inch balls and place on ungreased cookie sheets. Bake at 350° for 13-15 minutes or until lightly browned.
