Carmelized Onion, Proscuitto, Goat Cheese Pizza 0 Picture

  • 7-8 thin slices of Proscuitto
  • 1 Large Onion, sliced
  • 1 batch pizza dough (enough for a large pizza)
  • 4 ounces goat cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup shredded gruyere cheese

Step 1

In a heavy-bottomed dutch oven, cook proscuitto over medium-low heat until fat is rendered and is crispy.

Remove from pan and let drain on a paper-towel covered plate.

Add onions to dutch oven. Cook over low heat with honey for about 25-30 minutes or until onions softened and carmelized.

Meanwhile, spread pizza dough into a pizza pan and preheat oven to 450°.

Spread olive oil with garlic and thyme over pizza dough. When onions are finished, spread evenly over dough. Top with crumbled proscuitto and crumble on goat cheese. Coat entire pizza in mozzarella.
Bake at 450° for 10-15 minutes or until crust is cooked and cheese is browned and bubbly.
