Beef Meatballs with Parmesan

Ingredients
- 1 1/2 lbs lean ground beef
- 4 pinches freshly grated nutmeg
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup finely chopped fresh flat-leaf (Italian) parsley
- 4 T extra-virgin olive oil

Step 1
Put beef into bowl and season it with a little salt and plenty of pepper. Add the nutmeg, Parmesan, and parsley. Knead together with your hands until thoroughly mixed.
Dampen your hands with cold water. Shape into walnut-sized balls. Sprinkle with creole seasoning.
In large nonstick frying pan, heat 2 T of oil. Add half of the meatballs to the pan. Cook until golden brown, about 5 minutes, occasionally moving the pan in a smooth circular motion so that the balls cook on all sides without breaking. Transfer to a serving platter. Add remaining oil to pan and cook the remaining meatballs.
(Can saute first to brown and then finish in oven at 350 for 15 minutes.)
Serve hot, warm, or at room temp. For a different presentation, thread on tiny skewers and serve with marinara sauce. Can be a meal or appetizer.
