Preparation
Step 1
Rub the inside of the body cavity with salt. If desired. Place quartered onions and celery in body cavity.
During roasting, baste with drippings occasionally, if desired. When bird is 2/3 done, cut skin or string betweeen drumsticks. Remove foil the last 30 to 45 minutes. When done, the thigh meat should be 180. The meat should be tender and the juices from the thigh should run clear. Remove the turkey from oven; cover loosely with foil. Let stand 20 minutes before carving.
