Ingredients
- 1 medium onion, peeled and chopped
- 1 tsp. turmeric
- 2 1/2 tbsp. olive oil
- 1/3 cup (79 ml.) flour
- 1/2 cup (118 ml.) vegetable stock
- 1/4 cup(59 ml.) Dijon mustard
- 2 cups (483 ml.)soy milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. soy sauce
- 4 scallions, chopped
- 6 medium potatoes, peeled and sliced into thin discs

Preparation
Step 1
Preheat the oven to 375 degrees F (190 C) and oil a baking pan.
In a medium saucepan, saute the onions and turmeric in the oil over medium heat until the onions become soft (about 5 minutes)
Add the flour into the onions and stir for 2 minutes to thicken the mixture, making sure it has no lumps of flour in it. Set aside.
Gradually add in the remaining ingredients.
Place the potatoes on the baking pan.
Pour the sauce onto the potatoes and bake without a cover for 45 minutes.
