Flounder in Orange Sauce

Baked flounder will become a favorite when it's topped with an orange marmalade sauce. Ginger and green onions add a bit of mystery to the sauce.

Ingredients

  • 1/3 c low sugar orange marmalade
  • 2 T orange juice
  • 1/4 t ground ginger
  • 1/3 c green onions (about 3)
  • 4 4 oz flounder fillets (or orange roughy or cod)
  • Cooking spray

Preparation

Step 1

Preheat oven to 400. Combine first 3 ingredients in a small saucepan. Cook over medium heat until marmalade melts, stirring often. Remove from heat, and stir in green onions. Place fillets in 9 x 13 pan coated with spray. Spoon orange marmalade mixture over fillets. Bake at 400 for 10 minutes or until fish flakes easily. 4 servings
