Preparation
Step 1
1. Combine brine ingredients
2. Place chops in brine and refrigerate for at least one hour
3. Gentle vacuum seal chops (or use ZipLoc bags)
4. Cook in sous vide bath at 135°F for 2 to 3 hours
5. Pat dry chops and pan sear 45 seconds per side
6. Serve with favorite sauce
