  • 6 medium round red potatoes peeled (about 2 1/2lb)
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1 T. margarine
  • 1/2 c. chopped onion

Step 1

Arrange potatoes in a vegetable steamer over boiling water; cover and steam 15 minutes. Let cool; cover and chill. Coarsely shred potatoes. Combine potatoes, salt and pepper in a bowl; stir well and set aside.

Spray skillet with pam, add margarine and place over medium heat until margarine melts. Add onion; saute 5 minutes.

Add potato mixture, pressing into skillet with metal spatula. Partially cover, and cook 12 minutes or until browned on bottom and thoroughly heated. Invert onto a serving platter.
