They say chicken soup always makes you feel better, and this recipe really does! I usually add a bit more vegetables than the recipe calls out for.

Ingredients

  • For broth:
  • 1 fryer (or use 6 thighs or 3 breasts)
  • 4-1/2 cups water
  • 1 onion, quartered
  • 1 bay leaf
  • Parsley
  • For soup:
  • 2 cans (1 # each) tomatoes
  • 1 potato, diced
  • 1 onion, diced
  • 1 green pepper, diced
  • 3 carrots, diced
  • 1/2 cup uncooked rice (not Minute Rice)
  • 1 Tbls. salt
  • 1/2 teas. Pepper
  • 2 – 3 chicken bouillon cubes

Preparation

Step 1

Cook chicken about 1 hour. Remove meat and strain broth. Return broth to pan.

Prepare veggies and other ingredients and add to broth and simmer, covered 30 minutes. When chicken is cool, cut meat into small pieces and add to soup. Cook 15 minutes or until vegetables and rice are done.
