Ingredients

  • 1 egg
  • 1 cup buttermilk (have a little extra on hand to thin mixture if needed)
  • 2 Tbs clarified butter or vegetable oil
  • 1 cup all-purpose flour
  • 1 Tbs sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preparation

Step 1

Beat eggs with whisk until fluffy. Beat in remaining liquid ingredients; butter milk and clarified butter. Mix Dry ingredients in separate bowl. Combine dry ingredients into bowl with wet ingredients. Mix until well blended but not smooth. Let mixture sit while you heat you griddle.

Heat griddle to 400 a 425 degrees F. Pour about 3 Tablespoons batter onto the hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown
