Ingredients

  • 1 (2 1/2 to 3-pound) chicken, cut into 8 pieces (see Note)
  • 2 large onions, thinly sliced and separated into rings
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees F. Coat a 9" x 13" baking dish with cooking spray.

In a large bowl, combine all ingredients and toss until chicken is thoroughly coated. Place mixture in prepared baking dish.

Bake 60 to 70 minutes, or until chicken is no longer pink and juices run clear.

Note:
If you prefer, you can roast a whole chicken rather than cutting it up. Just be sure to coat the chicken completely with the seasoning mixture and cook it for an extra 20 minutes or until no pink remains and the juices run clear.
