Potato, Red Onion and Goat Cheese Frittata

Ingredients
- 3 medium new potatoes
- 2 tsp olive oil
- 1 small red onion, cut into 1-inch wedges
- pinch of chopped garlic
- 8-10 basil leaves, slivered
- 6 eggs, lightly beaten
- 4 oz goat cheese, broken into 1/2-inch chunks
- Salt and Pepper to taste

Preparation
Step 1
Bring small pot two-thirds full of water to a boil, add slat and potatoes, cook until tender, about 18-20 minutes. Drain potatoes, cool 12-15 minutes and cut into 1-inch cubes.
Preheat oven to 375 degrees.
In 10-inch ovenproof pan, over medium-high heat, warm olive oil. Add onion and saute, stirring occasionally, until tender, 5-6 minutes. Add potatoes, garlic and basil, saute, stirring occasionally, 1-2 minutes more. Add eggs, salt, pepper and goat cheese, stir until just mixed.
Transfer pan to oven and bake until set, 18-20 minutes.
