Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 medium onion; finely chopped
  • 10 ounces diced tomatoes with green chilies; undrained
  • 10 ounces enchilada sauce
  • 4.5 ounces chopped green chilies
  • 1-3/4 cups chicken broth
  • 1 cup frozen corn; thawed
  • 3 teaspoon garlic; minced
  • 1 teaspoon chili powder
  • 1-1/2 teaspoon ground cumin
  • 1/2 teaspoon Salt
  • tortilla strips

Preparation

Step 1

Place chicken in crockpot. Add all remaining ingredients.

Cover; cook on low heat setting 6 to 7 hours.

Remove chicken; shred with 2 forks. Return to crockpot and stir well to
blend.

Serve with tortilla strips.
