Everyone loves lemon. What i don't get is lemon are ripe in the fall so hard to use them in the spring!

Ingredients

  • Cake:
  • 4 eggs
  • 1 stck softened butter
  • 1/2 cup coconut oil
  • 1 1/2 cups sugar
  • 1/4 cup milk
  • 1 tsp vanilla
  • 2 cups sifted cake flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Glaze:
  • 1 1/2 cups sugar
  • 1/4 cup lemon juice
  • Zest of 1/2 lemon

Preparation

Step 1

Put rack in middle of oven. Preheat oven to 400 degrees? Line 18 cups w/ cupcake liners. Have eggs at room temp.
Cream butter, coconut oil & sugar w/ mixer. Add eggs 1 at a time beating after each. Add milk, then vanilla. Mix flour, baking powder, salt together in sm bowl. Spoon into wet & mix for 2 min. Bake at 400 degrees for 10-12 min.
Glaze:
Mix lemon juice & zest & sugar in sm saucepan over med heat covered heat until transparent. Test if it forms string when dropped from spoon. Remove from heat. Spoon over cupcakes as soon as they come out of the oven. Top w/ decorations if desired.
