Classic Meat Loaf

Ingredients
- 2 T unsalted butter
- 1 1/4 C onion, finely chopped
- 1 1/4 C finely chopped mushrooms
- 1/2 C finely diced celery
- 1/2 t dried thyme
- 1 t finely chopped garlic
- 1/2 C grated carrot
- 1 C fresh bread crumbs
- 1/2 C hanlf and half or milk
- 2 eggs
- 1 1/2 lb. ground chuck
- 1/2 lb. ground pork
- 4 slices bacon, finely chopped
- 1/34 t. kosher salt
- 1/2 t freshly ground black pepper
- 1/2 C ketchup
- 2 T brown sugar
- 2 t cider vinegar

Step 1
Preheat oven to 350 degrees. In large skillet heat butter until melted and foaming. Add onions, mushrooms, and celery. Season to taste with salt and pepper. Cook 3 minutes. Sprinkle thyme over onion mixture. Rub galic and pinch of salt into paste. Cook and stir until onions are tender and translucent. Stir in grated carrot. Remove from heat. Cool completely. Meanwhile, soak bread in half-and-half. Lightly beat eggs.
In large bowl combine ground meats, bacon, cooled vegetables and bread crumb mixture. Sprinkle the salt and pepper. Using hands, mix well.
Turn mixture into rectangular baking dish. Shape into a 9 x 5 loaf. Make shallow indentation around sides.
For ketchup topping: Combine ketchup, brown sugar and vinegar. Spoon over top of meat loaf. Bake for 1 hour. Let rest for 10 minutes before slicing.
