  • 1 cup unbleached flour
  • Sea Salt
  • Pinch sugar
  • Pinch paprika
  • 4 cups veg. oil
  • 1 1/2 pds baby artichokes (8 to 12)
  • 1 c lager such as Peroni
  • 1 large egg

Preparation

Step 1

Whisk together flour 1/2 t. sal, sugar and paprika: set aside

In 3 to 4 quart saucepan heat 3 in. oil to 375.

Cut off top 1/2 of 1 artichoke with serrated knife. Bend outer leaves bacward unti they snap off close to base, then discard several more layers until you reach pale yellow leaves with pale green tips. Cut off green tips. peel stem base, then but into thirds.

Add beer and egg to flour, whishing until smooth. Submerge artichoke in batter. Work in bathces of 10. Fry until golden 2 to 3 min.
