Ingredients
- 1/2 cup grated Parmesan cheese
- 3 garlic cloves, minced
- 1/2 cup minced fresh basil
- 1/4 cup minced fresh parsley
- 2 tsp. minced fresh oregano
- 1 1/2 tsp. salt
- 1 tsp. pepper
- 7 Tbsp. olive oil, divided
- 6 cups thinly sliced red potatoes (about 2 pounds)
- 1 can (14-1/2 ounces) diced tomatoes, drained

Preparation
Step 1
In a bowl, combine the first seven ingredients; set aside. Grease a shallow 2 1/2 quart baking dish with 1 Tbsp. oil.
Place a third of the potatoes and tomatoes in prepared dish. Drizzle with 2 Tbsp. oil, sprinkle with a third of the cheese mixture. Repeat the layers twice. Cover and bake at 350 degrees for 55-65 minutes or until potatoes are tender.
