Ingredients

  • 2 pkgs yeast (ot 4 1/2 tsp jar yeast)
  • 2 1/4 C water (1 C may be milk or potato liquid)
  • 3 T sugar
  • 1 T salt
  • 3 T shortening
  • 6 - 6/2 C bread flour

Preparation

Step 1

1. Combine yeast with 2-3 C flour and mix well
2. Combine water, shortening, sugar, salt and heat to 120 - 130 degrees (shortening does not need to melt)
3. Add water mixture to flour and beat at medium speed of mixer 2 minutes
4. Add flour until dough no longer clings to side of bowl.
5. Knead 8-10 minutes
6. Place in greased bowl - spray top with cooking spray and cover with cloth
7. Place in warm place (oven preheated to 200 with a shallow pan of water in the bottom and oven turned off) until double - about an hour
8. Punch dough down and shape into 2 loaves. Put into greased loaf pans and place in warm place until doubled (about an hour) May brush tops with margarine if desired
9. Preheat oven to 350 and bake about 30 min until golden brown and hollow-sounding

For cinnamon raisin bread - add 1 1/2 C raisins with 2nd addition of flour. Roll loaves out to a 13 X 8 rectangle. Brush with water. Mix 1/4 C sugar and 2 tsp. cinnamon. Sprinkle each laof with 1/2 of the mixture; roll up and put into greased pans
