Grilled Steak & Watercress Sandwiches

Ingredients
- 1 1/2 lb top sirloin steak
- Kosher salt & pepper
- 1 large, thinly sliced tomato
- 1 T red wine vinegar
- 1 t Dijon mustard
- 3 T olive oil + more for bread
- 1/4 chopped cornichons or dill pickle
- 2 T finely chopped shallot
- 1 ciabatta loaf
- 1/4 lb sliced Muenster cheese
- 1/2 bunch watercress

Preparation
Step 1
Prepare grill. Season steak generously with salt & pepper. Put tomato slices on plate & sprinkle with 1/4t salt & set aside
Whisk vinegar & mustard in small bowl. Whisk in olive oil in slow stream. Stir in cornichons & shallot & season with 1/4 t. salt & pepper.
Grill steak 2-3 min. Flip & grill other side 2-4 min. Transfer to cutting board & let rest @ 5 min.
Halve ciabatta horizontally. Brush cut sides with oil & sprinkle with salt. Grill cut side down until toasted @ 1 min. Remove from grill & line bottom half with cheese. Return to grill, cheese side up, & grill until cheese started to melt, 1-2 min.
Toss watercress with half of dressing in med. bowl. Thinly slice steak & season with salt & pepper. Arrange steak over cheese, spoon remaining dressing over steak & top with tomato & watercress. Slice & serve
