Ingredients
- 12 oz. skinless, boneless chicken breasts, cubed
- 1 tbsp. vegetable oil
- 1 can (14.5 oz) diced tomatoes
- 1 can (15.25 oz) whole kernel sweet corn, drained
- 1 can (14.5 oz) sliced carrots, drained
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 1 cup chicken broth, 99% fat free
- 1 1/2 cups instant white rice

Step 1
Season chicken with garlic powder, salt and pepper, if desired.
Cook chicken in hot oil in large skillet until no pink remains, about 5 minutes.
Stir in undrained tomatoes, corn, carrots, chili powder, cumin, and broth. Bring to a boil.
Stir in rice. Cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir before serving.
