EGGS BENEDICT MINI FRITTATAS

Over campfire it can be done!Pick up some foil muffin tins.Serve it with a tangy Dijon sauce for a great finish.

Ingredients
- 1/4 c ham1 shallot,chopped
- 4 eggs
- 1/2 c milk
- 2 tbsp chopped chives
- 1/2 tsp dry mustrd
- pinch each,salt and pepper
- 3 english muffins
- 1 tbsp butter,softened

Preparation
Step 1
Divide the ham and shallot among 6 greased foil muffin cups.In bowl,whisk together eggs,milk,chives,mutard,salt and pepper.Slowly pour into muffin cups.Place on grill over medium heat;close lid and cook for about 15 min.or until knife inserted in centre comes out clean.
Remove from grill and turn heat uo to medium-high and grill english muffins until golden.Spread with butter.Run knife around muffin cups and lift out frittatas and place on english muffins.
