Ingredients
- 1/3 cup white wine vinegar
- 1/2 tea. each salt and pepper
- 1 Tbsp. Dijon mustard
- 1 tea. sugar
- 2 tea. chopped thyme leaves or tarragon
- 1/2 cup extra virgin olive oil

Step 1
Stir together all ingredients, except oil. Slowly add the oil, whisking constantly.
Store dressings in a covered contain at room temperature for up to 5 days or in the fridge for up to 3 weeks.
Makes about 1 cup
