Ingredients

  • Dough:
  • 1 cup margarine
  • 1 cup sugar
  • 1 1/2 teaspoon salt
  • approximately 8 cups flour
  • 10 eggs
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon baking powder
  • Cheese Filling:
  • 3 pounds of ricotta
  • 1 1/2 teaspoon salt
  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 4 eggs

Preparation

Step 1

Dough:
Cream margarine and sugar. Add vanilla. Gradually add eggs. Sift dry ingredients, add to eggs and mix until dough can be handled. Knead dough slightly. Separate into 9 balls. Roll each ball into 9 circle and fill with cheese filling.

Cheese Filling:
Beat ricotta, sugar, salt and vanilla together. Fill dough circles with about 1 cup of filling. Fold dough over filling to form a half circle. Seal with pastry cutter. Brush with egg was and bake for 15-20 minutes at 450 degrees.


Note: As you know, there are always variances, these measurements are adjustable. Bake at 450 degrees.
