- 1 seasoned cast iron aebelskiver skillet
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups buttermilk
- 3 eggs, seperated
- 1/4 cup melted unsalted butter
- 2 tablespoons granulated sugar

Preparation
Step 1
In a large bowl, sift together the flour, baking powder soda and salt.
In a small bowl, whisk together the buttermil, egg yolks, butter and sugar util blended. In a separate bowl, whisk the egg whites until stiff peaks form.
Stire the buttermilk mixture into the dry ingredients just until blended. Add the beaten whites and gently fold in just until blended.
Heat the seasoned aebleskiver pan over medium heat until hot enough to sizzle a drop of water. Brush each cup in the pan with a thin film of vegetable oil or spray with nonstick cooking spray. Fill each cup with batter three-quarters full. Cook until brown or a creaso has formed on the aebleskiver. Turn with a bamboo skewer or knitting needle and continue to cook until the ball is golden brown and a toothpick inserted in the middle comes out clean.
After the first batch, you may find turning the heat down to medium-low works best.
Top or fill the aebleskiver with fruit preserve or syrup. Plan on 6 aebleskiver per person.
