  • 3 Tbs Butter
  • 3 Tbs Olive Oil
  • 1 lb Sea scallops, rinsed and dried
  • Sea saly and fresh ground pepper, to taste
  • 1 Tbs chopped Italian Parsley
  • 1 Lemon, quartered

Preparation

Step 1

In a heavy saute pan, heat butter and oilve oil over medium-high heat. When hot, add scallops, a few at a time. Do not over crowd.

Cook for about 2=3 minutes per side, just until edges begin to brown, Remove from pan and continue to cook until all scallops are finished.
Divide among four plates and sprinkle with parsley and garnish with lemon wedges. Pour browned butter and oil over, if desired., serve immediately
