No Knead Pumpernickle date walnut bread

This is a wonderful dark European style loaf, oh so good!

Ingredients
- 6 cups water
- 3 Tbs yeast
- 3 Tbs salt
- 4 Tbs molasses
- 3 Tbs cocoa powder
- 4 tsp instant espresso powder
- 2 cups rye flour
- 3 Tb coconut oil
- 3 Tbs caramel color
- 2 cups wheat flour
- 9 cups AP flour
- 3 Tbs caraway seeds
- 2 cups dates &/ or raisins
- 2 cups walnut pieces
- Cornstarch wash
- Caraway seeds for topping

Preparation
Step 1
Mix all ingredients in Kitchenaid mixer. Put in container let sit at room temp for 2-3 hours. Put in refrigerator for up to 7 days. Shape loaves & let rise for 1- 1 1/2 hours slash, brush w/ wash & sprinkle w/ seeds. Steam & bake at 400 degrees for 35-40 min.
