Ingredients

  • 6 cups water
  • 3 Tbs yeast
  • 3 Tbs salt
  • 4 Tbs molasses
  • 3 Tbs cocoa powder
  • 4 tsp instant espresso powder
  • 2 cups rye flour
  • 3 Tb coconut oil
  • 3 Tbs caramel color
  • 2 cups wheat flour
  • 9 cups AP flour
  • 3 Tbs caraway seeds
  • 2 cups dates &/ or raisins
  • 2 cups walnut pieces
  • Cornstarch wash
  • Caraway seeds for topping

Preparation

Step 1

Mix all ingredients in Kitchenaid mixer. Put in container let sit at room temp for 2-3 hours. Put in refrigerator for up to 7 days. Shape loaves & let rise for 1- 1 1/2 hours slash, brush w/ wash & sprinkle w/ seeds. Steam & bake at 400 degrees for 35-40 min.
