Ingredients

  • Crust:
  • 2 large egg whites
  • 1 tablespoon sugar
  • 2 c. sweetened flaked coconut
  • Lemon Curd:
  • 1 1/2 c. sugar
  • 1/2 c. flour
  • 2 tablespoons cornstarch
  • 1/2 tsp. salt
  • 4 egg yolks (reserve whites for frosting)
  • 1 tablespoon lemon zest
  • 1 c. lemon juice
  • Marshmallow Frosting:
  • 4 egg whites (from lemon curd)
  • 1/2 c. sugar
  • 1/2 tsp. cream of tartar
  • 1/2 tsp. vanilla

Preparation

Step 1

Crust:
In a medium bowl, beat the egg whites and sugar until frothy. Mix in the coconut. Spread mixture into greased(very greased) 8in square pan. Bake at 375 degrees for 15-20 min.

Lemon Curd:
In a large bowl, whisk the sugar, flour, cornstarch, and salt. Add the egg yolks, lemon zest and juice. Whisk to combine. Spread over the crust and bake for 35 min. Let cool to room temp. then refrigerate until chilled (at least 3 hrs).

Just before serving, make the marshmallow frosting. In a large metal bowl, whisk together the remaining egg whites, sugar and cream of tartar. Set the bowl over a saucepan filled with simmering water. Cook, whisking constantly, until sugar is dissolved completely.

Remove from heat and beat on low, gradually increasing the speed. Beat until soft peaks form and add vanilla. Spoon over lemon bars and sprinkle with coconut flakes. Cut into squares.
