Chocolate Decadence Cookies
Rich & chocoltey good with the tang of fresh made candied orange peel.
- 1/4 cup ap flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 8 oz chocolate either bittersweet or semi sweet, chopped
- 2 Tb butter
- 2 eggs
- 1/2 cup sugar
- 1 tsp vanilla
- 2 1/2 cups toasted walnut pieces &/or pecan pieces
- 6 oz chocolate, bittersweet or semisweet, chopped
- 1/4 to 1/2 cup candied orange peel
- Candied Orange Peel:
- 2 oranges cutin quarters, peel removed
- 1 1/3 cup sugar
- 1/2 cup water
- 2 quart saucepan
Preheat oven to 350, place 1 rack in upper 1/3 & 1 rack in lower 1/3 of oven. Line cookie sheets with parchment.
Stir together flour, baking powder & salt.
Microwave 8 oz chocolate on 50% power to melt.
In a heat proof bowl combine eggs (whisked), sugar& vanilla.sit bowl in skillet 1/4 full of simmering water. Whisk 2 min until lukewarm. Stir egg mixture into chocolate. Stir in flour mixture until combined. Add nuts & chopped 6 chocolate & stir. Fold in candied orange peel.
Bake Tbs size dough for 8-10 min. (350 degree oven). Halfway through baking switch sheets from bottom to top rack & vice versa. Remove & cool.
Candied Orange Peel:
Wit orange peel quarters use a spoon to scrape off the white pulp.leaving the peel intact.. Cut peel into 1/2" wide strips. Put water & sugar in 2 quart saucepan & bring to boil. Add orange peel. Return to boil stirring constantly until the sugar is dissolved. Reduce heat to boil gently uncovered until the peel is almost translucent approx 15 min., stirring occasionally. Remove peel allowing to drain off. Place on parchment paper to cool & dry. When cool enough to handle roll in sugar to coat, let dry for approx2 hours chop.
