- 3 tablespoon margarine
- 4 potatoes
- 3 leeks, chopped (about 3 cups)
- 4 cups chicken broth
- 2 cups water
- salt and pepper to taste

Preparation
Step 1
Peel and dice potatoes into 1 inch chunks.
In a saucepan, melt margarine over medium heat. Add leeks; saute until softened, about 5 minutes. Add potatoes, chicken broth, water, salt and pepper. Simmer partially covered, until potatoes are tender. Remove from heat. Cool slightly.
Blend leek mixture, in batches, in blender until smooth. Return to pan. Cook over medium heat until heated through.
