Ingredients
- 6 cups whole wheat flour
- 6 cups AP flour
- 1 cup wheat germ
- 2 cups coconut, finely shredded
- 4 tsp cinnamon
- 1 cup brown sugar
- 3 Tb yeast
- 2 Tb kosher salt
- 1/2 cup vital wheat gluten
- 7 cups water
- 4 cups shredded carrots
- 1 cup dried fruit (pineapple, raisins & cranberries are really good!)
- 1 cup walnut pieces
- Egg wash (1 egg lightly beaten w/ 1-2 Tb water)
- Raw sugar to sprinkle on top

Step 1
Mix ingredients starting with wet in Kitchenaid mixer. Put into container & let sit at room temp for 2-3 hours until double. Refrigerate. Shape loaves, let rise for 1 hour 45 min. Slash use egg wwash & top wit raw sugar. Bake at 375. Degrees for 30 min.
