  • ¾ Cup Flour
  • ¾ Cup Cake Flour
  • 1 Tbsp Sugar
  • 1 ½ tsp Baking Powder
  • ½ tsp Salt
  • 8 tsp Baking Soda
  • 3 Tbsp Solid Vegetable Shortening
  • ¾ Cup Buttermilk or 1 Cup Heavy Cream
  • Flour for Shaping
  • 2 Tbsp Butter, Melted

Step 1

Heat oven to 4750. Spray an 8” round cake pan with cooking spray. In medium-size bowl, mix flour, sugar, baking powder, salt and baking soda until blended. Cut in shortening with pastry blender until lumps are no larger than small peas. Stir in buttermilk or cream and let stand 2 to 3 minutes. Dough is very wet.

Pour remaining 1 cup flour onto a plate. Flour hands well. Scoop up 2 Tbsp dough (an ice-cream scoop works well, or half-fill a quarter-cup measure) and scrape it onto the flour sprinkle more flour over dough. Gently pick up clump of dough and shape into a soft round ball by passing it from hand to hand, shaking off excess flour.

Place in middle of prepared pan (dough will spread out). Shape 9 more biscuits the same way. Brush tops with melted butter. Bake 16 to 18 minutes or until biscuits are evenly golden brown. Serve warm.
