Ingredients
- • 2 lbs. red potatoes, peeled and sliced into 1/8” thick slices
- • ½ cup clarified butter, plus more as needed
- • Pepper and salt

Step 1
Preheat oven to 425°F.
Brush a 9” round baking pan with 2 tblsp. butter. Place 1 potato slice in center of pan and cover bottom with concentric circles of potato slices, slightly overlapping. Line sides of pan with potato slices, also overlapping.
Season with salt and pepper and drizzle with 1 tbsp. butter. Keep layering and seasoning and drizzling until all slices are gone.
Cover pan tightly with a piece of buttered aluminum foil. Bake for 30 minutes. Remove foil and press down potatoes with the back of a spatula. Bake for 30 minutes more until golden brown. Run a knife around inside of pan to loosen. Press a plate and invert potato cake onto pan. Serves 6.
