Ingredients

  • 8 lg eggs + 1 yolk
  • 2 cups melted butter
  • 1/2 cup water
  • 5 cups AP flour
  • 4 Tb sugar
  • 1 1/2 tsp salt
  • 1 Tb yeast

Preparation

Step 1

In mixer add 3 cups flour, water, yeast & eggs. Beat at medium speed w/ paddle& let sit for 45 min. Add rest of flour, sugar & salt & beat for 8-10 min. Put 2 Tb of flour on work surface pound butter until pliable w/ rolling pin. Pound & fold until pliable. Add to dough & incorporate. Cover dough & let rise for 1 hour. Put dough on lightly floured surface & fold several times w/ a bench knife. Put in oiled covered bowl & let proof overnight in refrigerator divide & shape dough put in "brioche containers". Mix egg yolk w/ 1 Tb water & brush on top of brioches. Bake at. 375 degrees for 40-45 min.
