Mandarin Beef with Long Beans

You can use our prepared Mandarin orange sauce in this recipe or make the sauce from scratch (see related recipe at right). Serve the beef with long beans—very long, rounded green pod beans that are popular in Asian cooking.

Ingredients

  • Canola oil for frying, plus 1 Tbs.
  • 4 eggs
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 2 lb. flank steak, cut across grain into 1⁄4-inch
  • slices
  • 1 shallot, thinly sliced
  • 12 oz. long beans, cut into 3-inch pieces,
  • blanched
  • 1 to 2 Tbs. chili garlic sauce
  • 1 bottle (9.5 fl. oz.) chinablue Mandarin orange
  • sauce
  • Sliced green onions for garnish

Preparation

Step 1

Preheat an oven to 200°F. Line a baking sheet with paper towels.

In a deep fryer, pour in oil and heat to 375°F according to the manufacturer's instructions.

In one pan of a breading set or in a bowl, whisk the eggs until blended. In another pan or bowl, whisk together the flour and cornstarch. Dip the beef into the eggs and drain off the excess. Toss the beef in the flour mixture to coat and shake off the excess. Transfer to a plate.

Working in batches, fry the beef until golden brown, 4 to 5 minutes. Transfer the beef to the prepared baking sheets to drain and keep warm in the oven.

In a wok over high heat, warm the 1 Tbs. oil. Add the shallot and cook, stirring constantly, until golden brown, about 2 minutes. Add the long beans and cook for 1 to 2 minutes. Stir in the chili garlic sauce.

In a large fry pan over medium heat, warm the Mandarin orange sauce for 2 to 3 minutes. Stir in the beef and garnish with green onions. Serve with the long beans
