Mario Batali's Mashed Turnips and Potatoes 1 Picture

Ingredients

  • 2 bunches Turnips
  • 1 pound Yukon Gold Potatoes (peeled and quartered)
  • 4 tablespoons cubed Butter
  • 2/3 cup Whole Milk (scalded)
  • 1/2 cup Creme Fraiche
  • 1/4 cup grated Parmesan
  • 1/4 cup Grain Mustard
  • Salt and Pepper to taste
  • 1/2 cup sliced Scallions

Preparation

Step 1

1. Peel the turnips. If they’re large, quarter them, if they’re smaller, halving them will do.

2. Steam the turnips and potatoes over two inches of boiling water. Steam for about 25 minutes, or until tender. Take the water out of the pot and add the turnips and potatoes back into the pan

3. Add butter and milk. Add the crème fraiche and stir in Parmesan cheese and mustard Stir in the scallion and add salt and pepper.
