Slow Cooker Spicy Chicken 0 Picture

Ingredients

  • 4 chicken breasts
  • Large can of diced tomatoes (can use plain, or chili accents)
  • 1 large can of black beans undrained (or red kidney beans)
  • 2 cloves of garlic
  • 1 cup salsa (pick your own heat!)
  • 1 can green chili's diced (opt)
  • 1 can corn, undrained
  • 1 can tomato sauce (last time I didn't have this so I threw in chicken stock and some extra salsa)
  • 2 t of cumin
  • salt & pepper to taste

Step 1

Toss everything in the crock pot...No need to cook the chicken....(or, sometimes I use cooked chicken that I have leftover and then you can shorten the cooking time by several hours).

Set the pot to low for about 8 hours. At 7 hours (or so) I pull OUT the chicken and shred it (using 2 forks) and put the shredded chicken back into the pot. The chicken will absorb a lot of the liquid....
Serve when you are ready or when chicken is hot again.
Serve in bowls with shredded cheddar on the bottom of the bowl, top with tortilla chips, sour cream and green onion!

It is filling and our new winter favourite! :)
