Ingredients

  • 1/2 c. Parmesan cheese
  • 2 eggs, well beaten
  • 3/4 c. panko (Japanese bread crumbs) or cornflake crumbs
  • 4 boneless skinless chicken breasts, flattened
  • 1/2 c. vegetable oil
  • 4 slices Monterey Jack or pepper jack cheese
  • 1/2 lb. fresh mushrooms
  • 1 Tbsp. butter or olive oil
  • 1/2 to 3/4 c. chicken broth
  • Chopped parsley and lemon juice or wedges, for garnish

Preparation

Step 1

Preheat oven to 325 degrees. Place Parmesan cheese, eggs and panko in three separate bowls.

Dip chicken into Parmesan cheese first, then eggs, then panko. Heat oil in skillet. Brown chicken, the place in a baking dish. Piece should not overlap. Place a slice of cheese on each breast.

Saute mushrooms in butter or oil; add broth. Place mushrooms over chicken breasts and cover with liquid from pan. Bake 30 minutes (do not overcook or chicken will be dry). Garnish with chopped parsley and lemon juice or wedges.
