A dark rich loaf that can be made into muffins. Lightly sweet coffee rich w/ bittersweet chocolate. Can bake as muffins & topped w/ sugar or chocolate glaze. Probably more popular as muffins.

Ingredients

  • 4 cups whole wheat flour
  • 8 cups AP flour
  • 2 cups cocoa powder
  • 3 Tb yeast
  • 1 Tb salt
  • 1/2 cup vital gluten
  • 4 1/2 cups water
  • 3 tsp espresso powder
  • 8 eggs
  • 1 cup coconut oil
  • 1 1/2 cups honey or maple syrup
  • 12 oz finely chopped or sm chips of bittersweet chocolate
  • Egg wash (1 egg whipped w/ 1/2 cup water)
  • Coarse raw sugar to sprinkle

Preparation

Step 1

Mix ingredients w/ Kitchenaid mixer. Put in loosely covered container at room temp for 3-4 hours. Put in frig for 7-14 days. W/ heavily floured hands take grapefruit sized piece of dough & shape into loaves. Cover & let rise for 45-60 min covered. Slash loaves brush w/egg wash & sprinkle w/ raw sugar. Bake at 350 degrees for 40 min. Can be prepared in muffin tins & baked at 350 degrees for 30-40 min. Can be topped w/ egg wash & sugar or w/ chocolate glaze as healthy muffins.
