Ingredients
- 1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)
- 1/2 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 8-10 all-beef hot dogs, cut into 1″ bites

Preparation
Step 1
1. Preheat oven to 375 degrees. Combine butter and sugar in a bowl, and whisk to combine. Add eggs and whisk to incorporate. Add buttermilk and whisk to incorporate.
2. In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine. Whisk into wet ingredients in two batches.
3. Spray a mini muffin tin with non-stick spray, and spoon 1 Tablespoon of batter into each mini muffin cup. Place one hot dog bite into the middle of each cup.
4. Bake for 8-12 minutes (oven temperatures vary), or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator, and re-heat for 20-30 seconds before serving.
A schmear of cold ketchup really sends the corn dog flavor over the top. I can’t get over how insane these are!
I literally had to pry Ben’s fingers from the mini muffin tin. Once he popped, he could not stop.
These are amazing served straight out of the oven, but can be made ahead of time, stored in the refrigerator, and microwaved for 30 seconds or so when it’s kickoff time. They taste just as good reheated. Not that I nuked five today and would know or anything.

This is the greatest idea ever. When I was in college I had a friend who couldn’t deal with crying girls… (we lived with a lot of them) So she would cook a hot dog whenever people were down. It was her way of comforting us… I mean them… So, all that being said, I have a special place in my heart for corn dogs.

Oh my, this recipe is so-o delicious looking and I plan to try it! As for the Super Bowl, well, we’re not big fans unless the Chicago Bears were featured, so we may just watch some of it to see what goes on.

I’m SO glad I discovered your blog! These mini corn dogs look so delish! I usually only allow myself to eat corn dogs at the state fair – and that’s ALL I eat when I’m there, while everyone else is sampling all the tantalizing foods, I’m checking out the various corn dog vendors! I know 2 little grandsons that will be very happy this Saturday night when they stay with Grandma thanks to you! I like that brand of hotdog, too! I did find some thinner Nathan’s hotdogs last time I shopped and they are delicious also – plenty of “gaaaalic” in them!

I think I’ll be making these with some chicken sausages. Maybe for the Super Bowl, probably before then. My kids would really love me if I put them in their lunchboxes. Thanks for sharing the recipe. How is the no-sugar January going? I FINALLY started yesterday and it hasn’t been too bad…yet. I enjoyed a Green Monster for lunch and it really quenched my craving for sugar.

I’m a Giants fan (living in Eagles country, hello 24/7 trash talking from everyone) so I’m PUMPED! But even if my team wasn’t in the game I still love football and I loooove tailgating foods. We’re ordering a ton of wings and whipping up some sides for a family football feast!
And then I will be super sad when I realize football season is over haha.

So cute! I am going to a dairy-free/gluten-free/vegetarian non-super bowl party and have no idea what to make. Obviously these won’t work (unless I find some gluten-free veggie dogs) but I want an excuse to make these for something else!

LOVE! I made them tonight as part of dinner, and they were great. I used the less butter and applesauce version. I like them, because you get all the taste of homemade corn dogs, but it’s not as messy. Plus they’re baked.
