Ingredients
- 3/4 C white rice, uncooked
- 1 apple, cored and choppped
- 1/2 tsp ground cinnamon
- 1/4 C fresh parsley, chopped
- 1-1/2 C apple juice
- 1/3 C raisins
- 1/4 tsp salt

Step 1
In saucepan, combine rice, apple juice, apples and raisins. Season with cinnamon and salt. Bring to a boil, reduce heat to low and cook, covered for about 17 minutes.
Mix in fresh parsley and serve.
