Black Bean Soup

This is the easiest Black Bean Soup imaginable. The longer it cooks the better it gets. The Classic Corn Bread (recipe in collection) is easy too. Enjoy!

Ingredients
- 2 cups dried black beans
- 2 cups diced pork or chicken leftovers
- 1 cup frozen or fresh corn
- 2 cups cubed tomatoes, fresh or canned
- 1 small yellow onion, chopped
- 1 tbsp chili powder (more to taste)
- 1 tbsp cumin (more to taste)
- Garlic salt to taste
- Sour cream

Preparation
Step 1
Wash and sort beans. Cover with cold water and let soak overnight. Drain off the water and rinse again.
Place the beans in a crock pot with enough water to cover them. Add the spices and onion. Let cook most of the day on medium heat. When the beans are just tender, add all the other ingredients. Let simmer for another hour. Serve hot with a dollop of sour cream and corn bread.
